What’s a good breakfast for people with high cholesterol?

My mom has high cholesterol, so she’s supposed to avoid eggs, red meat, and butter. I want to make her a mother’s day breakfast next week, but I don’t know what to make, any suggestions?

How about some porridge with stewed apples, cream and brown sugar sprinkled on top. The cream is a treat - generally she should have skim milk. Also, some melon on the side.

Oatmeal is great for those with high cholesterol and there are some really good recipes for egg white omelets…egg whites are fine, it’s the yolk of the egg that is a no-no (they taste better with some low fat cheese added). Add some fresh fruit and a whole grain muffin (with low fat margarine).

Try oatmeal topped with blueberries. Or try an egg white omelet with lox. Oatmeal lowers the amount of LDL, “bad” cholesterol” and foods with omega-3 fatty acids such as omega-3 enriched eggs or salmon lox, raise the amount of HDL, “good” cholesterol.
